can't help myself!

This jar was full when Amy left my house just before 9pm on Thursday...
It is possible that Phil ate a piece or two, but not likely that he put a significant dent in this jar of peanut brittle... (delicious, melt in your mouth, homemade peanut brittle) I did that all on my own. This was by far, the BEST peanut brittle I have ever had. Thanks, Amy, for making more peanut brittle just for me and for helping me to put on those 5 "sweater weather pounds" so deliciously!

This is super easy and since, if we all gain 5 sweater weather pounds, we'll all look relatively the same size, I'll share the recipe to encourage that gain :). You'll need a candy thermometer.

1 lb dry-roasted, salted peanuts
1.5 cups firmly packed light brown sugar
1 cup light corn syrup
1/3 cup water
2 Tbsp butter, cut into 6 or 8 pieces
1 tsp vanilla extract

Adjust rack to center of over, Preheat to 350 degrees. Butter a 14x17 in cookie sheet and set aside. Also butterthe blade of a large wooden spatula or spoon, set aside.
Place the peanuts in a large shallow pan and bake 5 min, stirringonce or twice. Turn off oven and let nuts remain in to keep warm (must stay warm).
In 3 quart heavy saucepan over high heat, stir in the sugar, corn syrup and water until the sugar is dissolved. Cook without sitrring until temp reaches 275 degr. Reduce heat to moderate and continue to cook until temp reaches 290 degr.
Immediately remove from heat. Work quickly. With wooden spoon, (not the buttered one) stir in butter, vanilla and warm peanuts. Instantly turn out onto the buttered cookie shet and use the butter spatula to press it out and flatten. Press as hard as you can.
Let cool to room temp. With wide metal spatula remove it from the cookie sheet and wipe the bottom with a paper towel to absorb the butter. Break into large pieces and store airtight.
Couple of notes: do NOT use any plastic or silicone baking utensils.
It's easy clean up, just soak in water until the super dissolves and washes away.
