Yummy!

I made these with the kids today, yummy! I found the recipe on Sycamore Strings while blog surfing the other day. The recipe came from an old (many years) issue of Sunset magazine.Brown Sugar-Banana Coffee Cakes
Makes 12-18 muffins
Preheat oven to 350 degrees

Streusel:
3/4 C flour
3/4 C brown sugar
1/4 tsp salt
1/4 C butter

Muffins:
1 1/2 C flour
1 C brown sugar
1/2 C mashed banana (1-2 bananas)
1/4 C butter
1/4 C sour cream
2 eggs
1 Tbsp vanilla
2 tsp baking powder
1/4 tsp salt

Streusel:
In food processor or bowl, mix flour, brown sugar and salt.
Cut butter into small pieces and add to brown; pulse to mix or cut in with pastry blender until mixture resembles coarse crumbs. Set aside.

Muffins:
Beat butter and brown sugar on high until smooth.
Beat in eggs and vanilla until well blended.
Beat in mashed bananas.
In a small brown, combine flour, baking powder and salt.
Add to banana mixture.
Gently fold in sour cream until well blended.
Divide matter equally into buttered and floured muffin cups. Fill about half full.
Sprinkle with streusel.
Bake 18-25 min. until toothpick inserted in middle comes out clean.

Oh, yum! Tonight I'm making 15 star-shaped (as in Houston Astros) cupcakes for our t-ball team's last game. I love baking.
