I love mushrooms. Sometimes, I will just saute a pan of mushrooms and eat them for lunch or snack. When I was a kid, and my mom would take me to the grocery store, the produce manager would greet me with a button mushroom that I would promptly eat! I know it is strange, I mean, how many kids do you know that love mushrooms? I can't get my kids to eat them to save their lives...
And then I came across this post and new that I had found a mushroom that my kids would eat! I like to bake from scratch, but this time we took the easy way out and ran to the store for cake mix and frosting on our way to the library yesterday. The kids picked lemon flavored cake mix and the frosting is whipped with about half a jar of red food coloring gel. I will say, I have not enjoyed them as much as I might of if they were chocolate... and if we had not gotten yesterday's Dr. report in the middle of icing these babies. None the less, the kids loved decorating them and I think they are pretty fun (and easy) cup cakes.

They're very cute! I have a friend who loves fungi. She even inspired me to take a photo of a beautiful one--it's scheduled to post some time this week. Keep your eye out.
My favorite is our local country club's cream of mushroom soup. Yum! I think I might have to get some carry-out tomorrow after church--it's just across the street!
You're not the only one who loves mushrooms -- I do too. I have a distinct memory of eating a toadstool in my family's front yard around the age of 3 and being rewarded with Syrup of Ipecac (sp?) and lots of vomiting. :-)
